Veggie + Protein Packed Egg Bake

Prep this for the week ahead!





I often say that nutrition is messy. I spent a lot of my 20s depriving myself and eating bullshit because I couldn’t quite figure things out. It wasn’t sustainable and I never got my 125 lb “goal” body. Anyone else have a similar story?


There’s so much information out there that it feels overwhelming and exhausting taking it all in and trying to actually implement it.


So I always take the slow and strong approach with my clients. Don't ask me for a quick fix, because I'm not going to give it to you. In my nutrition guide (you can find it in my private training community.) we be implementing small, sustainable changes every week that work individually. And we learn to implement these changes while still giving ourselves balance and grace—because I don’t want to live in a world where I can’t eat tacos and ice cream. 🤷‍♀️ Do you?


One of my go-to's for a busy mornings before a hard workout is this egg bake. Bake it once and warm it up throughout the week. 👌


➡️ 1 pound shredded sweet potatoes (1 large sweet potato usually does the trick!)

➡️ 6 large eggs, 2 cups egg whites whipped with 1/2 cup of milk or milk alternative (I get the carton of egg whites from Costco and throw what I don't use in the freezer)

➡️ 1 lb of turkey breakfast sausage

➡️ salt, pepper and a tablespoon of garlic powder

➡️ veggies: I like mushrooms and a large handful of spinach



Sauté up your breakfast sausage, whip your eggs in a large bowl and toss it all in a sprayed 9x13 pan. Sprinkle with some cheddar cheese and bake at 350 for 60 minutes. This makes 8 servings and macros are: 15C, 8F, and 20P. (Add cheese to make it a bit more indulgent, just be sure you add it on to your macro count.)


PS. You can't tell there's egg whites in this which is a huge added bonus. lol
