5 Quick Meals for Busy Nights

We are officially into the busy spring season and dinner time seems busier than ever!

(I'd like to note though, that I am very happy to have things on the schedule this year.)




I ebb and flow when it comes to planning meals and right now, I'm not very enthusiastic about it. So, I'm making a list of a few of my favorite quick meals so that when my brain can't think of anything I can turn to this. Hopefully it helps you out too.

Here are 5 of my go-to's:



  • Sheet Pan Chicken Fajitas from Food Network: these are great to meal prep ahead of time and toss in the fridge or freezer. I often double or triple this recipe to make a few lunches for the week as well.

  • Egg Roll In a Bowl from 40 Aprons: My body needs more carbs so I throw some white rice into this too--it is SO good.

  • Creamy Taco Soup from Salt + Lavender: This is legit one of the easiest recipes I've found. Plus I love soup and this makes enough leftovers for 2 lunches unless you live with my husband.

  • Homemade Pizza with Flat Out Wraps: I like to chop tons of peppers and mushrooms and sautée up some turkey Italian sausage ahead of time so these can come together fast on a busy night. Bonus--the kids won't complain about eating these!

  • Honey Mustard Salmon from A Sassy Spoon: I like to use the leftover rice from my chicken fajitas and microwave some broccoli for this quick meal. Also, this marinade is GREAT on chicken too. Leave out the honey like I do if you like things more savory versus sweet.
